Ingredients
Vegetables and Herbs
- 2 medium eggplants, cut into cubes
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ red bell pepper, diced
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- ¼ cup Kalamata olives
Dressing
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 garlic clove, minced
- 1 teaspoon red wine vinegar
- ½ teaspoon dried oregano
- Salt and black pepper to taste
Other
- 2 tablespoons olive oil (for roasting)
- ½ cup crumbled feta cheese (optional)
Instructions
- Preheat and prepare eggplant: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Toss eggplant with oil and seasoning: In a large bowl, add cubed eggplant and drizzle with 2 tablespoons olive oil. Season with salt and black pepper, then toss well to evenly coat the eggplant pieces.
- Roast eggplant: Spread the eggplant cubes in a single layer on the prepared baking sheet, avoiding crowding to help them brown evenly. Roast for 25 to 30 minutes, turning the pieces halfway through, until they turn golden brown and become tender. Remove and allow to cool slightly.
- Prepare fresh vegetables: While the eggplant roasts, halve the cherry tomatoes, dice the cucumber and red bell pepper, and thinly slice the red onion to prepare the fresh components of the salad.
- Make the dressing: In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, minced garlic, red wine vinegar, dried oregano, salt, and black pepper until well combined.
- Combine salad ingredients: In a large serving bowl, add the roasted eggplant, prepared tomatoes, cucumber, bell pepper, red onion, chopped parsley, chopped mint, and Kalamata olives.
- Toss with dressing: Pour the lemon garlic dressing over the salad and gently toss everything together to evenly coat the ingredients with the flavorful dressing.
- Add cheese and serve: Sprinkle the salad with crumbled feta cheese if using. Serve the salad slightly chilled or at room temperature for best flavor.
Notes
- Lightly salt the eggplant and let it rest for 15 minutes before roasting to reduce excess moisture and bitterness.
- Avoid overcrowding the baking sheet while roasting to ensure even browning and caramelization.
- Add cooked chickpeas to the salad for extra protein and fiber, making it more filling.
- Substitute goat cheese for feta if preferred for a different creamy texture and flavor.
- Fresh basil or cilantro can be used instead of parsley or mint to vary the herbaceous notes.
- Store leftovers in an airtight container in the refrigerator for up to 3 days for optimal freshness.
