Description
Crispy, savory bites made with fresh spinach, creamy feta cheese, and flaky phyllo dough or wraps. These Mediterranean-inspired crisps offer a perfect balance of crunchy texture and rich, flavorful filling, making them an ideal appetizer or snack for any occasion.
Ingredients
Filling
- 2 cups fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup cream cheese
- 2 cloves garlic, minced
- 1 teaspoon olive oil
Pastry
- 4 sheets phyllo dough or wraps
- 1 egg, beaten (for brushing)
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F) to ensure it’s ready to bake the crisps to a perfect golden brown.
- Sauté Spinach and Garlic: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant, then add chopped spinach. Cook until the spinach is wilted and any excess moisture evaporates, about 3–4 minutes. Remove from heat and let cool slightly.
- Prepare Filling: In a bowl, combine the sautéed spinach and garlic with crumbled feta cheese and cream cheese. Mix well until fully incorporated to create a creamy, flavorful filling.
- Cut Phyllo Sheets: On a clean surface, lay out the phyllo sheets and cut each sheet into strips approximately 2 inches wide. Keep the remaining sheets covered with a damp cloth to prevent drying out.
- Assemble Crisps: Place a small spoonful of the spinach and cheese filling at one end of each phyllo strip. Fold the strip into triangles or roll it up tightly, ensuring the filling is enclosed securely.
- Apply Egg Wash: Brush each assembled crisp generously with the beaten egg. This will provide a glossy finish and help the pastry brown beautifully during baking.
- Bake Crisps: Arrange the crisps on a baking tray lined with parchment paper. Bake in the preheated oven for 15–20 minutes, or until they are golden brown and crispy.
- Serve: Remove the crisps from the oven and allow them to cool slightly. Serve warm, ideally with a side of yogurt dip or your favorite complementary sauce.
Notes
- Keep phyllo dough sheets covered with a damp cloth to prevent them from drying out and becoming brittle.
- For added flavor, incorporate herbs such as fresh dill or oregano into the filling mixture.
- Serve these crisps warm for the best texture and flavor experience, ideally accompanied by a cool yogurt dip.
