Description

Mediterranean Stuffed Salmon features tender salmon fillets filled with a delicious mixture of spinach, feta cheese, sun-dried tomatoes, and herbs. This elegant yet easy dinner is packed with vibrant Mediterranean flavors, making it a healthy and satisfying meal perfect for any occasion.

Ingredients

Salmon

  • 4 salmon fillets

Filling

  • 1 cup baby spinach, chopped
  • ½ cup crumbled feta cheese
  • ¼ cup chopped sun-dried tomatoes
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

To Serve

  • Lemon wedges

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the salmon.
  2. Prepare Salmon Pockets: Carefully cut a pocket into each salmon fillet without slicing all the way through to hold the filling.
  3. Mix Filling: In a bowl, combine chopped spinach, crumbled feta cheese, sun-dried tomatoes, minced garlic, dried oregano, olive oil, salt, and pepper. Mix thoroughly to blend the flavors.
  4. Stuff Salmon: Gently stuff each salmon fillet pocket with the prepared filling, ensuring an even distribution.
  5. Arrange on Baking Tray: Place the stuffed salmon fillets on a lined baking tray. Secure the opening with toothpicks if necessary to keep the filling inside during cooking.
  6. Bake: Bake the salmon in the preheated oven for 15–18 minutes, until the fish is cooked through and flakes easily with a fork.
  7. Serve: Remove from the oven and serve immediately with fresh lemon wedges to brighten the flavors. Pair with roasted vegetables or rice for a complete meal.

Notes

  • Use toothpicks to secure the salmon pockets if needed to prevent the filling from spilling out during baking.
  • This dish pairs excellently with roasted vegetables or a side of rice for a balanced dinner.
  • Fresh spinach is preferred for the filling to maintain vibrant color and flavor.
