Instructions
- Prepare the filling: In a skillet over medium heat, sauté the diced mushrooms, diced onion, and minced garlic until the vegetables are soft and fragrant, about 5-7 minutes. Season with salt and pepper to taste. Remove from heat and let cool slightly.
- Combine with cheeses: In a bowl, mix the sautéed mushroom mixture with the softened cream cheese and shredded mozzarella until well combined to create a creamy stuffing.
- Stuff the chicken breasts: Using a sharp knife, carefully cut a pocket into each chicken breast without cutting all the way through. Stuff each pocket generously with the mushroom and cheese mixture.
- Bake the chicken: Preheat your oven to 375°F (190°C). Place the stuffed chicken breasts on a baking dish and bake for 30 minutes, or until the chicken is cooked through and juices run clear, and the cheese filling is melted and bubbly.
