Description

These Mushroom Swiss Cheeseburger Stuffed Potatoes combine the hearty flavors of a classic cheeseburger with tender baked potatoes and a creamy, tangy dijonnaise sauce. Perfect as a satisfying main course, this recipe offers a delicious twist by incorporating sautéed mushrooms and Swiss cheese for a rich, comforting meal.

Ingredients

Potatoes and Filling

  • 4 large russet potatoes
  • 250 g ground beef
  • 1 cup mushrooms, sliced
  • 1/2 onion, chopped
  • 1 cup shredded Swiss cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Dijonnaise Sauce

  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the Oven: Preheat your oven to 200°C (400°F) to prepare for baking the potatoes.
  2. Bake the Potatoes: Place the russet potatoes directly on the oven rack or a baking sheet and bake for 45 to 50 minutes until they are tender when pierced with a fork.
  3. Cook the Beef Mixture: While the potatoes bake, heat olive oil in a pan over medium heat. Add the ground beef and cook until it’s browned and no longer pink.
  4. Add Mushrooms and Onions: Add the sliced mushrooms and chopped onion to the pan with the beef. Cook until the vegetables are softened and fragrant. Season with salt and pepper to taste.
  5. Prepare the Potatoes for Stuffing: Once the potatoes are baked and cool enough to handle, slice each potato open lengthwise. Fluff the inside with a fork to create a soft base for the filling.
  6. Fill the Potatoes: Spoon the beef, mushroom, and onion mixture into each potato. Top generously with shredded Swiss cheese.
  7. Melt the Cheese: Return the stuffed potatoes to the oven for about 5 minutes or until the Swiss cheese has melted and is bubbly.
  8. Make the Dijonnaise Sauce: While the cheese melts, mix together the mayonnaise and Dijon mustard in a small bowl until smooth.
  9. Serve: Drizzle the dijonnaise sauce over the stuffed potatoes before serving. Serve immediately for the best texture and flavor.

Notes

  • Use leftover cooked ground beef instead of fresh to save time.
  • Adding pickles on top of the stuffed potatoes can enhance the traditional cheeseburger flavor.
  • For the best texture, serve the stuffed potatoes immediately after adding the dijonnaise sauce to prevent sogginess.
