Description

One Pan Balsamic Chicken is a simple, flavorful dinner featuring juicy chicken breasts baked with colorful vegetables in a sweet and tangy balsamic glaze. This easy one-pan meal is perfect for busy weeknights with minimal cleanup, combining wholesome ingredients and vibrant flavors in a quick and healthy dish.

Ingredients

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

Vegetables

  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 zucchini, sliced
  • ½ red onion, sliced

Garnish

  • Fresh basil, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the proper temperature for even cooking and to help the chicken and vegetables roast nicely.
  2. Prepare Balsamic Mixture: In a bowl, whisk together olive oil, balsamic vinegar, honey, minced garlic, Italian seasoning, salt, and black pepper to create a flavorful glaze that will coat the chicken and vegetables.
  3. Arrange Ingredients: Place the chicken breasts and the broccoli florets, cherry tomatoes, sliced zucchini, and red onion on a large sheet pan, spacing them out so they roast evenly.
  4. Coat with Glaze: Pour the balsamic mixture over the chicken and vegetables, tossing the vegetables gently to ensure everything is well coated with the marinade.
  5. Bake: Place the sheet pan in the preheated oven and bake for 25 to 30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and slightly caramelized.
  6. Garnish and Serve: Remove from the oven and garnish with fresh basil leaves before serving to add a fresh pop of color and flavor.
