- 1 lb Italian sausage links (mild or hot)
- 2 tbsp olive oil
- 1 red bell pepper, sliced

- 3 cloves garlic, minced

- 1 tsp dried oregano
- 1 tsp dried basil

- ½ cup crushed tomatoes (or tomato sauce)
- Salt and black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat the oil: Heat olive oil in a large skillet over medium-high heat until shimmering.
- Brown the sausages: Add Italian sausages and cook, turning occasionally, until browned on all sides, about 5–6 minutes. Remove sausages and set aside while you cook the vegetables.
- Sauté the vegetables: In the same pan, add sliced onion and bell peppers. Cook, stirring occasionally, until vegetables soften, about 5 minutes.
- Add garlic and herbs: Stir in minced garlic, dried oregano, dried basil, and red pepper flakes if using. Cook for about 1 minute until fragrant.
- Add tomatoes and seasonings: Pour in crushed tomatoes, then season with salt and black pepper to taste. Stir to combine evenly.
- Simmer with sausages: Return sausages to the pan, nestling them into the sauce. Cover the pan with a lid and reduce heat to medium-low. Simmer for 15–20 minutes, or until sausages are fully cooked through.
- Garnish and serve: Sprinkle fresh parsley over the dish for a bright finish. Serve hot with your choice of pasta, rice, or crusty Italian bread.
