Description

This One-Pot Creamy Vegetable Soup is a rich and comforting dish loaded with wholesome vegetables. Made entirely in one pot, it offers an easy, satisfying meal perfect for busy weeknights, combining a creamy texture with fresh herbs and a touch of elegance.

Ingredients

Main Ingredients

  • 2 tbsp butter or olive oil
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 potato, peeled and diced
  • 1 zucchini, chopped
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half

Garnish

  • Fresh parsley or chives, for garnish

Instructions

  1. Heat Butter or Oil: Heat the butter or olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
  2. Add Vegetables: Add the diced onion, chopped carrots, celery, potato, and zucchini to the pot and cook for 5–7 minutes, stirring occasionally, until they start to soften.
  3. Add Broth and Thyme: Pour in the vegetable broth and add the dried thyme. Stir to combine all ingredients evenly.
  4. Simmer: Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until all vegetables are tender and fully cooked.
  5. Blend Soup: Use an immersion blender to blend part or all of the soup to your desired creamy texture, leaving some chunks if preferred for added texture.
  6. Stir in Cream: Gently stir in the heavy cream or half-and-half and warm the soup without bringing it to a boil to avoid curdling.
  7. Season: Season the soup with salt and black pepper to taste, adjusting as needed.
  8. Garnish and Serve: Garnish with fresh parsley or chives and serve the soup warm for a comforting meal.

Notes

  • For a dairy-free version, substitute heavy cream with coconut milk to maintain creaminess without dairy.
  • Add broccoli or cauliflower along with other vegetables for additional flavor and nutrition.
  • Serve the soup with crusty bread or crackers for a complete and satisfying meal.
