Instructions
- Heat the olive oil: Heat olive oil in a large pot over medium heat to prepare for sautéing the beef and vegetables.
- Cook beef and onion: Add ground beef and diced onion to the pot; cook, stirring occasionally, until the beef is browned and the onion is softened, about 5-7 minutes.
- Add garlic and herbs: Stir in minced garlic, Italian seasoning, dried basil, and dried oregano, cooking for an additional 1 minute until fragrant.
- Add liquids: Pour in the crushed tomatoes and beef broth, stirring to combine. Bring the mixture to a boil over medium-high heat.
- Add pasta: Stir in the broken pieces of lasagna noodles, ensuring they are submerged in the liquid.
- Simmer the soup: Reduce the heat to low and let the soup simmer for 15–20 minutes, stirring occasionally, until the noodles are tender and cooked through.
- Season the soup: Taste and season the soup with salt and freshly ground black pepper as desired.
- Prepare cheese topping: In a bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, and chopped fresh parsley, mixing until well blended.
