Description

All the comforting flavors of traditional lasagna transformed into a hearty, one-pot soup loaded with ground beef, pasta, tomatoes, and a creamy cheese topping, perfect for an easy and satisfying dinner.

Ingredients

Main Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • 1 can (28 oz) crushed tomatoes
  • 6 cups beef broth
  • 8 lasagna noodles, broken into pieces
  • Salt and black pepper, to taste

Cheese Topping

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat the olive oil: Heat olive oil in a large pot over medium heat to prepare for sautéing the beef and vegetables.
  2. Cook beef and onion: Add ground beef and diced onion to the pot; cook, stirring occasionally, until the beef is browned and the onion is softened, about 5-7 minutes.
  3. Add garlic and herbs: Stir in minced garlic, Italian seasoning, dried basil, and dried oregano, cooking for an additional 1 minute until fragrant.
  4. Add liquids: Pour in the crushed tomatoes and beef broth, stirring to combine. Bring the mixture to a boil over medium-high heat.
  5. Add pasta: Stir in the broken pieces of lasagna noodles, ensuring they are submerged in the liquid.
  6. Simmer the soup: Reduce the heat to low and let the soup simmer for 15–20 minutes, stirring occasionally, until the noodles are tender and cooked through.
  7. Season the soup: Taste and season the soup with salt and freshly ground black pepper as desired.
  8. Prepare cheese topping: In a bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, and chopped fresh parsley, mixing until well blended.
  9. Serve: Ladle the hot soup into bowls and top each serving with a generous spoonful of the cheese mixture for a creamy, cheesy finish.

Notes

  • The lasagna noodles will continue absorbing liquid as the soup sits; add extra beef broth when reheating to maintain the desired consistency.
  • For a leaner option, ground turkey or Italian sausage can be substituted for the ground beef.
  • Fresh basil can be added as a garnish for extra flavor if desired.
  • Use gluten-free noodles to adapt for gluten sensitivities.
