Ingredients
Chicken and Marinade
- 2 chicken breasts, sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Pasta and Broth
- 1 cup orzo
- 2 cups chicken broth
Flavorings and Garnish
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- Zest of 1 lemon
- 2 tablespoons parsley, chopped
Instructions
- Heat Olive Oil: Heat olive oil in a large pan over medium heat to prepare for cooking the chicken and flavor base.
- Brown Chicken: Add the sliced chicken breasts to the pan and cook until browned on all sides. Remove chicken from the pan and set aside to prevent overcooking.
- Sauté Garlic: In the same pan, add minced garlic and sauté until fragrant, about 30 seconds to 1 minute, infusing the oil with flavor.
- Toast Orzo: Add the orzo to the pan and toast it for 1 to 2 minutes, stirring frequently to prevent burning and enhance its nutty flavor.
- Add Broth and Simmer: Pour in the chicken broth and bring the mixture to a gentle simmer, allowing the orzo to cook and absorb the liquid.
- Return Chicken and Cook Orzo: Return the browned chicken to the pan, cover, and cook until the orzo is tender and the chicken is fully cooked through, about 10-15 minutes.
- Season and Finish: Stir in the lemon juice, lemon zest, salt, and pepper to brighten the dish. Adjust seasoning to taste.
- Garnish and Serve: Sprinkle chopped parsley over the finished dish for freshness and serve hot.
Notes
- Add spinach to the dish during the last few minutes of cooking for extra nutrition and color.
- Use pre-cooked chicken to reduce preparation time and make the dish quicker.
- Adjust the amount of lemon juice and zest according to your taste preference for more or less tanginess.
