Ingredients
Main Ingredients
- 3 cups cooked and chilled jasmine rice
- 1 1/2 cups fresh pineapple, diced
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (such as carrots, peas, bell peppers)
- 2 green onions, sliced
- 2 garlic cloves, minced
Seasonings & Oils
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp neutral oil (such as vegetable or canola oil)
- 1/2 tsp curry powder
- Salt and black pepper, to taste
Add-ins & Garnish
- 1/4 cup cashews
- Fresh cilantro, for garnish
Instructions
- Prepare the oil and eggs: Heat the neutral oil in a large wok or skillet over high heat. Add the lightly beaten eggs and scramble gently until just set. Remove the eggs from the pan and set aside to keep warm.
- Sauté garlic: Add the sesame oil to the same pan and sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it.
- Cook vegetables: Add the mixed vegetables to the pan and stir-fry for 2 to 3 minutes until they begin to soften but still retain some crunch.
- Fry the rice: Add the chilled jasmine rice to the pan and stir-fry for 3 to 4 minutes, breaking up any clumps and ensuring even heating throughout.
- Add pineapple and seasonings: Stir in the diced pineapple, soy sauce, curry powder, and season with salt and black pepper to taste. Mix thoroughly to combine all the flavors.
- Combine eggs back in: Return the scrambled eggs to the pan and toss everything together evenly to distribute the eggs throughout the rice mixture.
- Add cashews and green onions: Stir in the cashews and sliced green onions, cooking for an additional 1 to 2 minutes to allow the flavors to meld and the cashews to warm.
- Garnish and serve: Remove from heat, garnish with fresh cilantro, and serve the pineapple fried rice hot for a delightful tropical meal.
Notes
- For best texture, use chilled day-old jasmine rice to prevent clumping and achieve a fluffy fried rice.
- For added protein, mix in cooked shrimp or diced chicken during the vegetable cooking step.
- To make this dish gluten-free, substitute soy sauce with tamari or a gluten-free soy sauce alternative.
