Instructions
- Season Beef: Generously season the beef chuck roast with salt and black pepper on all sides to enhance flavor.
- Sear Beef: Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until it develops a rich brown crust, about 3-4 minutes per side. This locks in juices and adds depth to the flavor.
- Transfer to Slow Cooker: Place the seared roast into a slow cooker. Add sliced onion, minced garlic, beef broth, Worcestershire sauce, soy sauce, dried thyme, dried rosemary, and bay leaf around the roast.
- Slow Cook: Cover and cook on low for 8–9 hours or on high for 4–5 hours until the beef is fork-tender and easily shreds.
- Shred Beef: Remove the beef from the slow cooker and shred it using two forks, discarding any excess fat.
- Coat Beef: Return the shredded beef to the slow cooker and stir it into the cooking liquid to soak up the flavorful au jus.
- Prepare Rolls: Toast the hoagie rolls until lightly browned to help prevent sogginess. If desired, place a slice of provolone cheese on each roll and allow it to melt slightly.
- Assemble Sandwiches: Load the toasted rolls generously with the shredded beef and garnish with freshly chopped parsley.
