Ingredients

Chicken and Vegetables

  • 500 g boneless, skinless chicken breast, thinly sliced
  • 300 g lo mein or egg noodles
  • 1 red bell pepper, sliced
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 3 green onions, sliced
  • 2 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated

Sauce

  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 12 tsp chili garlic sauce
  • 1/2 tsp red pepper flakes


Instructions

  1. Cook the noodles: Prepare the lo mein noodles according to package instructions, then drain and set aside to prevent sticking.
  2. Make the sauce: In a bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, honey, chili garlic sauce, and red pepper flakes until well combined.
  3. Cook the chicken: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the sliced chicken breast and stir-fry for 4 to 5 minutes until fully cooked and lightly browned. Remove the chicken from the pan and set aside.
  4. Sauté aromatics and vegetables: Add the remaining tablespoon of oil to the pan. Add the minced garlic and grated ginger, sautéing briefly until fragrant. Add the sliced red bell pepper, shredded cabbage, and julienned carrot, stir-frying for 3 to 4 minutes until vegetables are just tender but still crisp.
  5. Combine chicken and noodles: Return the cooked chicken to the pan with the vegetables. Add the drained noodles along with the prepared sauce. Toss everything together over high heat to evenly coat the noodles and ingredients with the sauce, cooking for 2 to 3 minutes until heated through.
  6. Serve: Remove from heat, garnish with sliced green onions, and serve immediately while hot.
