Description

This Quick and Easy Taco Mac and Cheese combines creamy elbow macaroni with seasoned ground beef, melted cheddar cheese, and classic taco flavors like salsa and taco seasoning to create a comforting one-pot meal perfect for a fast family dinner.

Ingredients

Pasta

  • 12 oz elbow macaroni

Meat and Seasoning

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (about 1 oz)

Liquids and Dairy

  • 1 cup beef broth
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • ½ cup cream or milk

Garnish

  • Chopped cilantro (optional)

Instructions

  1. Cook Macaroni: Bring a large pot of salted water to a boil and cook the elbow macaroni until al dente, about 8-9 minutes. Drain well and set aside.
  2. Brown Ground Beef: In a large skillet or pot, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until fully browned and no longer pink, about 5-7 minutes. Drain any excess fat from the pan.
  3. Add Seasoning and Liquids: Stir in the taco seasoning packet, then pour in the beef broth and salsa. Mix well and bring the mixture to a simmer to let the flavors meld for about 3-4 minutes.
  4. Combine Pasta and Sauce: Add the cooked macaroni to the seasoned beef mixture and stir to combine thoroughly.
  5. Add Cheese and Cream: Lower the heat to medium-low and stir in the cream or milk along with the shredded cheddar cheese. Continue stirring until the cheese is fully melted and the sauce is creamy, about 2-3 minutes.
  6. Garnish and Serve: Remove from heat, garnish with chopped cilantro if desired, and serve warm.

Notes

  • Add black beans or corn to the mixture for additional texture and nutrition.
  • Top with sour cream or diced avocado for extra creaminess and flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
