Description

Raspberry Granola Stuffed French Toast is a deliciously indulgent breakfast featuring thick-cut brioche bread filled with a creamy cream cheese mixture, fresh juicy raspberries, and crunchy granola. The stuffed sandwiches are dipped in a spiced egg mixture and cooked golden brown on the stovetop, then dusted with powdered sugar and served with extra berries and maple syrup. Perfect for a special weekend brunch or festive breakfast treat.

Ingredients

Bread and Filling

  • 8 slices thick-cut brioche or Texas toast
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup granola

Egg Mixture

  • 3 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon

For Cooking and Serving

  • 1 tbsp butter
  • Powdered sugar, for serving
  • Maple syrup, for serving

Instructions

  1. Prepare the cream cheese filling: In a small bowl, beat together the softened cream cheese, powdered sugar, and 1/2 teaspoon vanilla extract until smooth and creamy.
  2. Assemble the stuffed sandwiches: Spread the cream cheese mixture evenly over 4 slices of the thick-cut bread. Top each with fresh raspberries and granola, then cover with the remaining 4 slices to form sandwiches.
  3. Make the egg wash: In a shallow bowl, whisk together the eggs, milk, 1 teaspoon vanilla extract, and ground cinnamon until fully combined.
  4. Dip the sandwiches: Carefully dip each stuffed sandwich into the egg mixture, coating both sides well but avoiding soaking the bread too much to prevent sogginess.
  5. Cook the French toast: Heat butter in a large skillet or griddle over medium heat. Place the dipped sandwiches in the pan and cook for about 3–4 minutes per side, or until the bread is golden brown and the cream cheese filling is warmed through.
  6. Serve: Transfer the cooked French toast to plates, dust with powdered sugar, and serve warm with additional fresh raspberries, granola, and maple syrup if desired.

Notes

  • Use thick-cut brioche or day-old bread to better hold the filling and prevent sogginess.
  • Frozen raspberries can be used; just thaw and drain them well before using.
  • For a bright citrus twist, add a teaspoon of lemon zest to the cream cheese filling.
  • Serve with whipped cream or Greek yogurt for added creaminess and indulgence.
