Ingredients
Phyllo Pastry
- 8 sheets phyllo pastry, thawed
- ½ cup unsalted butter, melted (or olive oil for brushing)
- Sesame seeds, for garnish (optional)
Filling
- 2 large roasted red peppers, finely chopped and well drained
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 2 green onions, finely sliced
- 2 tbsp chopped fresh parsley
- 1 tsp dried oregano
- 1 clove garlic, minced
- ¼ tsp black pepper
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Prepare the filling: In a medium bowl, thoroughly combine finely chopped roasted red peppers, crumbled feta cheese, softened cream cheese, sliced green onions, chopped fresh parsley, dried oregano, minced garlic, and black pepper until all ingredients are well integrated.
- Prepare phyllo layers: Place one sheet of phyllo pastry on a clean workspace and lightly brush it with melted butter. Place a second sheet on top and brush again with butter. This layering helps create a flaky texture.
- Cut phyllo strips: Cut the layered phyllo sheets lengthwise into three equal strips to create manageable sizes for folding.
- Add filling: Spoon about 1 tablespoon of the filling mixture at the bottom end of each phyllo strip.
- Fold triangles: Fold one corner of the phyllo over the filling to form a triangle. Continue folding the strip over itself in a flag-like manner until the entire strip is folded into a compact triangle.
- Arrange on baking sheet: Place each folded triangle seam-side down on the prepared baking sheet to prevent them from unfolding during baking.
- Brush and garnish: Brush the tops of the triangles with additional melted butter for golden crispiness and sprinkle sesame seeds if desired for extra texture and flavor.
- Bake: Bake the triangles in the preheated oven for 18 to 22 minutes, or until they turn golden brown and crisp.
- Cool and serve: Remove the baked triangles from the oven and let them cool for 5 minutes to set before serving.
Notes
- Keep unused phyllo pastry covered with a damp towel while working to prevent it from drying out and becoming brittle.
- Ensure roasted red peppers are thoroughly drained to avoid soggy pastries and maintain crispiness.
- You can freeze unbaked triangles for up to 2 months and bake them straight from frozen; increase baking time by 3 to 5 minutes accordingly.
- For a different herbal flavor, substitute fresh dill or basil for parsley in the filling.
