Description

Ingredients

Meat & Vegetables

  • 1 lb ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 cup green beans

Liquids & Canned Goods

  • 1 can diced tomatoes (14 oz)
  • 6 cups beef broth

Seasonings

  • 1 tsp Italian seasoning
  • Salt & pepper, to taste


Instructions

  1. Brown the beef and onion: In a large pot or dutch oven over medium heat, add the ground beef and diced onion. Cook, breaking the meat apart with a spoon, until the beef is fully browned and the onion is soft. Drain off any excess fat to keep the soup from being greasy.
  2. Add vegetables and liquids: To the browned beef mixture, add the diced carrots, diced potatoes, canned diced tomatoes (with their juice), and 6 cups of beef broth. Stir in the Italian seasoning and season generously with salt and pepper.
  3. Simmer the soup: Bring the soup to a boil, then reduce heat to low. Cover and let it simmer gently for 25 to 30 minutes, or until the carrots and potatoes are tender.
  4. Add green beans: Stir in the fresh green beans during the last 5 minutes of simmering, allowing them to cook until just tender but still bright green. Adjust seasoning if needed before serving.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the pot and stir to thicken the broth.
  • You can substitute frozen green beans if fresh are not available; add directly without thawing.
  • To boost flavor, consider adding a splash of Worcestershire sauce or a bay leaf while simmering.
