Description

A hearty and comforting Italian soup featuring tender gnocchi, savory sausage, and a creamy, flavorful broth, enriched with spinach and seasoned with thyme. Perfect for cozy dinners or warming up chilly days.

Ingredients

Soup Base

  • 1 tablespoon olive oil
  • 250 g Italian sausage, sliced or crumbled
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk or cream
  • Salt and black pepper to taste
  • 1/2 teaspoon dried thyme

Vegetables and Add-ins

  • 2 cups potatoes, diced (optional)
  • 1 package (400 g) gnocchi
  • 1 cup spinach or kale

Instructions

  1. Heat the olive oil: Place a large pot over medium heat and add the olive oil to warm.
  2. Cook the sausage: Add the Italian sausage to the pot and cook until browned and cooked through, stirring occasionally to break it up if crumbled.
  3. Sauté the aromatics: Add the chopped onion and minced garlic to the pot with the sausage; cook until the onion is softened and translucent, about 3-5 minutes.
  4. Add broth and potatoes: Pour in the chicken broth and bring to a simmer. If using potatoes, add them now and cook until tender, approximately 10-15 minutes.
  5. Cook the gnocchi: Add the gnocchi to the simmering soup and cook for 3-5 minutes until they float to the surface, indicating they are done.
  6. Finish with milk and greens: Stir in the milk or cream, then add the spinach or kale. Cook just until the greens wilt, about 1-2 minutes.
  7. Season and serve: Add salt, black pepper, and dried thyme to taste. Give the soup a final gentle stir and serve hot.

Notes

  • Use spicy Italian sausage for an extra flavor kick.
  • Add gnocchi towards the end since it cooks very quickly.
  • Substitute kale for spinach depending on preference or what you have on hand.
