Description

A bold and savory stir-fried ramen dish featuring minced pork cooked in aromatic curry spices. This dish combines rich umami flavors with a slightly spicy kick for a satisfying, quick meal perfect for dinner.

Ingredients

Main Ingredients

  • 2 packs ramen noodles (discard seasoning packets)
  • 200 g minced pork
  • 1 tablespoon oil
  • 2 cloves garlic, minced
  • 1/2 onion, sliced
  • 1 tablespoon curry powder
  • 1 tablespoon soy sauce
  • 1 teaspoon oyster sauce
  • 1/2 teaspoon sugar
  • 1/2 cup cabbage or bok choy
  • 2 tablespoons water
  • Green onions for garnish

Instructions

  1. Cook Noodles: Boil the ramen noodles according to the package instructions without using the seasoning packets. Once cooked, drain the noodles thoroughly and set them aside.
  2. Heat Oil: Place a wok or large skillet over medium heat and add 1 tablespoon of oil, heating until shimmering.
  3. Sauté Aromatics: Add the minced garlic and sliced onion to the hot oil and sauté until fragrant and the onions are translucent, about 2-3 minutes.
  4. Cook Pork: Add the minced pork to the wok and cook, stirring frequently, until the pork is fully browned and cooked through, about 5-6 minutes.
  5. Add Curry Powder: Stir in 1 tablespoon of curry powder, mixing well to coat the pork evenly and to release the spices’ aroma.
  6. Season Sauce: Pour in the soy sauce, oyster sauce, sugar, and 2 tablespoons of water. Stir everything together to combine the flavors into a saucy mixture.
  7. Add Vegetables: Toss in the cabbage or bok choy and cook for 2-3 minutes until the vegetables are tender but still crisp.
  8. Combine Noodles: Add the cooked noodles back into the wok and toss thoroughly to mix with the pork, spices, and vegetables, ensuring everything is heated through and well combined.
  9. Garnish and Serve: Transfer the stir-fried curry noodles to serving plates and garnish with freshly chopped green onions. Serve hot for best flavor.

Notes

  • Adjust the amount of curry powder to suit your preferred spice level.
  • For extra heat, sprinkle in some chili flakes while cooking.
  • To make this dish with a different protein, substitute minced pork with minced chicken or tofu for a vegetarian option.
