Description

Juicy Greek-inspired chicken thighs are roasted on a single sheet pan alongside vibrant vegetables, creating a flavorful and effortless meal. Served warm in pita bread and topped with a creamy, tangy feta tzatziki, this dish brings the authentic taste of Mediterranean gyros to your dinner table with minimal prep and cleanup.

Ingredients

For the Chicken and Vegetables

  • 700 g boneless, skinless chicken thighs
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 1 zucchini, sliced
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste
  • 4 pita breads
  • Fresh parsley, for serving

For the Feta Tzatziki

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 75 g feta cheese, crumbled
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tbsp fresh dill
  • Salt, to taste

Instructions

  1. Preheat the Oven: Set your oven to 220°C (425°F) to ensure it’s hot and ready for roasting the chicken and vegetables.
  2. Prepare the Sheet Pan: Arrange the chicken thighs, sliced red bell pepper, red onion, and zucchini evenly on a large sheet pan.
  3. Season and Toss: Drizzle olive oil over the chicken and vegetables. Sprinkle with dried oregano, smoked paprika, garlic powder, ground cumin, salt, and black pepper. Toss everything together to coat all ingredients evenly.
  4. Roast: Place the sheet pan in the preheated oven and roast for 20–25 minutes, or until the chicken is cooked through, reaching an internal temperature of 75°C (165°F), and lightly browned on the edges.
  5. Make the Feta Tzatziki: While the chicken roasts, combine Greek yogurt, grated cucumber (make sure it’s well-drained), crumbled feta cheese, lemon juice, minced garlic, fresh dill, and salt in a bowl. Mix until smooth and creamy.
  6. Warm the Pita Breads: Heat the pita breads in the oven or on a stovetop briefly until soft and warm.
  7. Assemble the Gyros: Slice the cooked chicken thighs into strips. Fill each warm pita with chicken slices and a generous helping of the roasted vegetables.
  8. Add Tzatziki and Garnish: Spoon a generous amount of feta tzatziki over the filled pita breads. Garnish with fresh parsley before serving.

Notes

  • Chicken breasts can be substituted for thighs but watch carefully to prevent drying out.
  • Consider adding sliced tomatoes, olives, or lettuce to your gyros for extra flavor and texture.
  • For added browning and a hint of char, broil the chicken and vegetables for 2–3 minutes at the end of roasting.
