Description

Shrimp Boil Foil Packets offer a delicious and fuss-free meal combining juicy shrimp, smoky sausage, sweet corn, and tender baby potatoes all tossed in garlic butter and Old Bay seasoning. These foil packets are ideal for grilling, baking, or taking on a camping trip, delivering a flavorful seafood boil experience with minimal cleanup.

Ingredients

Seafood and Meat

  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced

Vegetables

  • 12 oz baby potatoes, halved and parboiled
  • 2 ears corn, cut into 4 pieces each

Seasonings and Sauces

  • 4 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tsp Old Bay seasoning
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley
  • Lemon wedges for serving

Instructions

  1. Preheat: Preheat your grill or oven to 400°F (204°C) to prepare for cooking the foil packets evenly.
  2. Combine Ingredients: In a large bowl, mix together the shrimp, smoked sausage slices, parboiled baby potatoes, and cut corn pieces ensuring all ingredients are ready to be seasoned.
  3. Prepare Seasoning: In a separate small bowl, stir together melted unsalted butter, olive oil, minced garlic, Old Bay seasoning, paprika, salt, and black pepper to create a flavorful butter sauce.
  4. Coat Mixture: Pour the seasoned butter mixture over the shrimp, sausage, potatoes, and corn. Toss everything well so all components are evenly coated in the seasoning blend.
  5. Assemble Foil Packets: Divide the mixture evenly onto four large sheets of heavy-duty foil. Fold and seal each packet tightly to lock in the steam and flavors during cooking.
  6. Cook: Place the foil packets on the grill or in the oven and cook for 15–18 minutes until the shrimp are pink and opaque and the vegetables are tender.
  7. Serve: Carefully open the packets to avoid steam burns. Garnish each packet with chopped fresh parsley and serve immediately with lemon wedges on the side for squeezing.

Notes

  • Parboiling the potatoes before assembling ensures they cook evenly inside the foil packets.
  • Substitute smoked sausage with andouille sausage for an extra spicy kick.
  • Exercise caution when opening foil packets as hot steam can escape and cause burns.
