Shrimp

Rice and Vegetables

  • 1 cup frozen peas and carrots

  • 3 garlic cloves, minced
  • 1 teaspoon grated fresh ginger

Other Ingredients

  • 2 tablespoons sesame oil
  • 2 eggs, beaten
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame seeds


Instructions

  1. Heat the Oil: Heat 1 tablespoon sesame oil in a large wok or skillet over medium-high heat to begin cooking the shrimp.
  2. Cook the Shrimp: Add the shrimp and cook for 2–3 minutes per side until they turn pink and are fully cooked through. Remove the shrimp from the pan and set aside.
  3. Scramble the Eggs: Add the remaining tablespoon of sesame oil to the pan. Pour in the beaten eggs and scramble them gently until just cooked. Remove the eggs and set aside with the shrimp.
  4. Sauté the Vegetables: Add the minced garlic, grated ginger, frozen peas, and carrots to the pan. Sauté for 2–3 minutes until the vegetables are tender and fragrant.
  5. Add the Rice: Add the chilled jasmine rice to the pan and stir-fry for 3–4 minutes, breaking up any clumps and mixing everything thoroughly.
  6. Season: Stir in the low-sodium soy sauce and optional oyster sauce evenly, coating the rice and vegetables.
  7. Combine Everything: Return the cooked shrimp and scrambled eggs to the pan. Toss everything together gently to combine and heat through.
  8. Garnish and Serve: Sprinkle with sliced green onions and sesame seeds before serving to add fresh flavor and a bit of crunch.
