  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese

Burger Sauce

  • ¼ cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp mustard
  • 1 tsp pickle relish


Instructions

  1. Prepare Burger Sauce: In a small bowl, mix together mayonnaise, ketchup, mustard, and pickle relish until well combined. Refrigerate the sauce to let the flavors meld while you prepare the rest of the meal.
  2. Season the Ground Beef: In a medium bowl, combine the ground beef with garlic powder, onion powder, salt, and pepper. Mix gently to evenly distribute the seasonings without overworking the meat.
  3. Form and Cook Smashburger Patties: Heat a skillet over medium-high heat. Portion the seasoned beef into small balls and press them thinly into patties directly in the hot skillet. Cook each patty until it is well browned and cooked through, about 2-3 minutes per side. Remove from skillet and chop into small pieces once cool enough to handle.
  4. Assemble the Quesadillas: Clean the skillet and return it to medium heat. Place one flour tortilla in the skillet. Sprinkle cheese over half of the tortilla, then add a layer of the chopped smashburger beef, diced onions, and pickles on top of the cheese.
  5. Cook Quesadillas Until Crisp: Fold the tortilla over to cover the fillings and press down lightly with a spatula. Cook until the bottom is golden and crispy, about 2-3 minutes, then carefully flip and cook the other side until golden and the cheese is melted.
  6. Repeat and Serve: Repeat the assembly and cooking process with the remaining tortillas and ingredients. Slice each quesadilla into wedges and serve hot with the prepared burger sauce on the side for dipping.
