Ingredients
For the Salad
- 2 heads romaine lettuce, chopped
- ½ cup grated Parmesan cheese
- 2 lemons, halved
- 2 cups bread cubes
- 2 tbsp olive oil
- ½ tsp smoked paprika
- Salt and pepper, to taste
For the Caesar Dressing
- ½ cup mayonnaise
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 2 tbsp grated Parmesan cheese
- Salt and black pepper, to taste
Instructions
- Preheat Grill and Oven: Preheat a grill or grill pan to medium heat and the oven to 375°F (190°C).
- Prepare Croutons: Toss bread cubes with olive oil, smoked paprika, salt, and pepper to evenly coat. Spread the cubes on a baking sheet and bake for 10–12 minutes until crisp and golden brown. Remove and set aside.
- Grill Lemons: Place lemon halves cut-side down on the preheated grill. Grill for 2–3 minutes until they develop light char marks and become fragrant. Remove from grill.
- Make Caesar Dressing: In a small bowl, whisk together mayonnaise, fresh lemon juice, Dijon mustard, minced garlic, grated Parmesan cheese, salt, and black pepper until smooth and well combined.
- Assemble Salad: Place chopped romaine lettuce into a large salad bowl. Add the grated Parmesan cheese and freshly baked croutons on top.
- Add Grilled Lemon Juice: Squeeze the juice from the grilled lemon halves over the salad to add a smoky, citrusy brightness.
- Toss and Serve: Pour the Caesar dressing over the salad and gently toss to coat all ingredients evenly. Serve immediately to enjoy the crisp texture and fresh flavors.
