Ingredients
Soup Base
- 2 tbsp butter
- 1 onion, diced
- 2 apples, peeled and chopped
- 3 cups pumpkin purée

- 1/2 cup cream or coconut milk
Instructions
- Sauté Onion and Apples: In a large pot or saucepan, melt the butter over medium heat. Add the diced onion and chopped apples, cooking until the onion becomes translucent and the apples soften, about 5-7 minutes.
- Add Pumpkin and Spices: Stir in the pumpkin purée, vegetable broth, cinnamon, and nutmeg. Mix well to combine all the flavors.
- Simmer the Soup: Bring the mixture to a gentle simmer. Let it cook uncovered for about 15 minutes, allowing the flavors to meld and the apples to become tender.
- Blend Until Smooth: Use an immersion blender directly in the pot or carefully transfer the soup in batches to a blender. Blend until completely smooth and creamy.
- Finish with Cream: Return the blended soup to the pot (if needed) and stir in the cream or coconut milk. Heat gently without boiling, then remove from heat and serve warm.
