Description

A moist, warmly spiced quick bread made with sweet potatoes and aromatic spices. Perfect for cozy fall mornings, holiday brunches, or as a comforting snack.

Ingredients

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp ground ginger

Wet Ingredients

  • 1 cup mashed cooked sweet potato (about 1 medium)
  • ½ cup vegetable oil (or melted butter)
  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk (or buttermilk)

Optional

  • ½ cup chopped pecans or walnuts

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease and line a 9×5-inch loaf pan with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger until well combined.
  3. Combine Wet Ingredients: In a large bowl, whisk the mashed cooked sweet potato, vegetable oil, brown sugar, granulated sugar, eggs, vanilla extract, and milk until the mixture is smooth and homogenous.
  4. Incorporate Dry Ingredients: Gently fold the dry ingredient mixture into the wet ingredients until just combined. Be careful not to overmix to keep the bread tender.
  5. Add Nuts: Stir in the chopped pecans or walnuts if using, ensuring even distribution throughout the batter.
  6. Prepare for Baking: Pour the batter into the prepared loaf pan and smooth the top with a spatula for even baking.
  7. Bake: Place the loaf pan in the preheated oven and bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean indicating the bread is fully baked.
  8. Cool: Allow the bread to cool in the pan for 10 minutes to set, then transfer it onto a wire rack to cool completely before slicing and serving.

Notes

  • Roast or boil sweet potatoes ahead of time, then mash and cool before using for optimal texture.
  • For extra sweetness and a subtle crunch, sprinkle cinnamon sugar over the batter just before baking.
  • This bread freezes well for up to 3 months when wrapped tightly in plastic wrap and foil.
