Description

A warming and flavorful soup featuring tender chicken, aromatic vegetables, and a spicy broth that delivers comfort with a kick. This spicy chicken soup is perfect for chilly days or whenever you crave a bold, soothing meal packed with hearty ingredients and vibrant spices.

Ingredients

Protein

  • 2 chicken breasts

Broth and Liquids

  • 6 cups chicken broth

Vegetables and Aromatics

  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced

Spices and Seasoning

  • 1 teaspoon chili flakes or hot sauce
  • 1 teaspoon paprika
  • Salt and pepper to taste

Oils and Garnishes

  • 1 tablespoon olive oil
  • Fresh cilantro or parsley for garnish

Instructions

  1. Prepare the base: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the minced garlic, diced carrot, and diced celery, and sauté until they become fragrant and slightly softened, about 5 minutes.
  2. Add chicken and broth: Place the chicken breasts into the pot and pour in 6 cups of chicken broth. Increase the heat to bring the mixture to a boil.
  3. Simmer the soup: Once boiling, reduce the heat to low and cover the pot. Let it simmer gently until the chicken is thoroughly cooked, approximately 20 minutes.
  4. Shred the chicken: Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the soup.
  5. Season the soup: Stir in 1 teaspoon of chili flakes (or hot sauce) and 1 teaspoon of paprika for heat and smoky flavor. Season the soup with salt and pepper according to your taste preferences.
  6. Serve and garnish: Ladle the hot soup into bowls and garnish with freshly chopped cilantro or parsley for a fresh herbal note. Serve immediately while warm and comforting.

Notes

  • Adjust the spice level by adding more or less chili flakes or hot sauce according to your heat tolerance.
  • To make the soup heartier, consider adding cooked noodles, rice, or potatoes.
  • For the best flavor, use fresh herbs for garnish instead of dried ones.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days, flavors often improve after resting.
