Description

Juicy boneless chicken thighs are marinated in a creamy, spicy coconut mixture and grilled to perfection. Served in crisp lettuce leaves topped with fresh vegetables and herbs, these wraps make a light, flavorful, and healthy meal perfect for lunch or dinner.

Ingredients

Chicken and Marinade

  • 600 g boneless, skinless chicken thighs
  • 1/2 cup coconut milk
  • 1 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 tsp chili paste
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste

Wrap and Garnish

  • 1 head butter or romaine lettuce
  • 1 carrot, julienned
  • 1/2 cucumber, thinly sliced
  • 2 green onions, sliced
  • Fresh cilantro, for serving
  • Lime wedges, for serving

Instructions

  1. Prepare the Marinade: In a bowl, whisk together coconut milk, lime juice, soy sauce, honey, minced garlic, grated ginger, chili paste, ground cumin, salt, and black pepper to create a flavorful marinade.
  2. Marinate the Chicken: Add the boneless chicken thighs to the marinade and toss well to coat all pieces evenly. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.
  3. Preheat the Grill: Heat your grill or grill pan to medium-high heat, ensuring it is hot before adding the chicken to get a good sear and grill marks.
  4. Grill the Chicken: Remove the chicken from the marinade, letting any excess drip off, and grill for about 5–7 minutes per side until the chicken is fully cooked through and has beautiful grill marks.
  5. Rest and Slice: Once cooked, transfer the chicken to a plate and let it rest for 5 minutes. Then slice the chicken into strips suitable for wrapping.
  6. Prepare the Lettuce Leaves: Separate the lettuce leaves carefully, wash them thoroughly, and pat dry to use as wraps.
  7. Assemble the Wraps: Place slices of grilled chicken on each lettuce leaf, then top with julienned carrot, thin cucumber slices, and sliced green onions.
  8. Garnish and Serve: Sprinkle fresh cilantro over the wraps and serve with lime wedges on the side for an extra burst of citrus flavor.

Notes

  • Chicken thighs remain juicy and tender when grilled, but chicken breasts can be substituted if preferred.
  • For added texture and crunch, sprinkle crushed peanuts or cashews on top before serving.
  • Adjust the amount of chili paste to make the wraps more or less spicy according to your taste.
