Ingredients

Pasta and Corn

  • 12 oz (340 g) spaghetti
  • 2 cups fresh or frozen corn kernels

Protein and Dairy

  • 4 oz (115 g) bacon, diced
  • 2 large eggs
  • 2 egg yolks
  • 3/4 cup grated Parmesan cheese

Seasonings

  • 2 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Liquids and Garnish

  • 1 cup reserved pasta water
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve 1 cup of the pasta cooking water before draining the pasta.
  2. Cook Bacon: In a large skillet over medium heat, cook the diced bacon until it is crisp and browned.
  3. Add Corn: Add the corn kernels to the skillet with the bacon and cook for 3 to 4 minutes until the corn is tender and slightly caramelized.
  4. Season: Stir in the minced garlic, red pepper flakes, and smoked paprika, cooking for about 30 seconds until fragrant.
  5. Mix Eggs and Cheese: In a bowl, whisk together the eggs, egg yolks, grated Parmesan cheese, black pepper, and salt until well combined.
  6. Toss Pasta in Skillet: Add the hot drained pasta to the skillet with the corn and bacon mixture and toss to combine thoroughly.
  7. Create Sauce: Remove the skillet from the heat, then slowly pour the egg and cheese mixture over the pasta while tossing continuously to prevent scrambling. Gradually add reserved pasta water until the sauce reaches a creamy consistency.
  8. Garnish and Serve: Sprinkle the pasta with fresh chopped parsley and extra Parmesan cheese if desired. Serve immediately while hot and creamy.
