Ingredients

Enoki Mushrooms

  • 200 g enoki mushrooms
  • 1 tbsp oil

Sauce

  • 1 tbsp gochujang or chili paste
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp garlic, minced
  • 1 tsp sesame oil
  • 1 tbsp water


Instructions

  1. Prepare Mushrooms: Trim the base of the enoki mushrooms and separate them into smaller bundles to ensure even cooking.
  2. Heat Oil: Heat 1 tablespoon of oil in a pan over medium heat to prepare for cooking the mushrooms.
  3. Cook Mushrooms: Add the enoki mushrooms to the pan and cook for 2 to 3 minutes until they become softened but not mushy.
  4. Mix Sauce: In a bowl, thoroughly mix together the gochujang or chili paste, soy sauce, sugar, minced garlic, sesame oil, and water to create the spicy sauce.
  5. Add Sauce: Pour the sauce into the pan with the mushrooms and toss gently to coat them evenly in the sauce.
  6. Thicken Sauce: Continue cooking for another 1 to 2 minutes until the sauce thickens and clings to the mushrooms.
  7. Serve: Serve the spicy enoki mushrooms hot as a flavorful side dish or appetizer. Garnish with sesame seeds or chopped green onions if desired.
