Description

A simple and flavorful Mediterranean-inspired dish combining tender orzo pasta with sautéed mushrooms, fresh spinach, and a light, savory sauce finished with Parmesan cheese. This quick and easy recipe works perfectly as a nutritious side or a light main meal.

Ingredients

Orzo Pasta

  • 1 cup orzo

Vegetables

  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced

Other Ingredients

  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook Orzo: Bring a pot of salted water to a boil. Add the orzo pasta and cook according to package instructions, usually about 8-10 minutes, until tender. Drain and set aside.
  2. Sauté Garlic and Mushrooms: In a large pan, heat olive oil over medium heat. Add the minced garlic and sliced mushrooms, cooking for about 5-7 minutes until the mushrooms have softened and released their moisture.
  3. Cook Spinach: Add fresh spinach to the pan with the mushrooms and garlic. Stir and cook for 2-3 minutes until the spinach wilts down and is tender.
  4. Combine Pasta and Vegetables: Stir the cooked orzo into the pan with the vegetables, mixing thoroughly to combine all ingredients evenly.
  5. Add Cheese and Seasoning: Sprinkle the grated Parmesan cheese over the orzo and vegetables. Season with salt and pepper to taste, stirring to melt the cheese and distribute seasoning.
  6. Serve: Remove from heat and serve the spinach and mushroom orzo warm as a side dish or a light main course.

Notes

  • For a richer dish, add a splash of heavy cream when combining the pasta with the vegetables.
  • Use vegetable broth instead of water to cook the orzo to enhance the flavor.
  • Top with toasted pine nuts to add a delightful crunchy texture.
