Description

Street Corn Chicken Rice Bowls combine juicy seasoned chicken, fluffy white rice, and creamy Mexican-style street corn topped with cotija cheese and fresh cilantro for a flavorful and colorful weeknight meal.

Ingredients

Rice and Chicken

  • 2 cups cooked white rice
  • 2 chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste

Street Corn Mixture

  • 2 cups corn kernels
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ½ cup cotija cheese, crumbled
  • 1 tablespoon lime juice
  • ¼ cup chopped cilantro

Garnish

  • Lime wedges, for serving

Instructions

  1. Season the chicken: In a bowl, combine diced chicken with chili powder, smoked paprika, garlic powder, salt, and black pepper. Toss well to coat each piece evenly with the spices.
  2. Cook the chicken: Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and sauté for 6–8 minutes until the chicken is fully cooked and lightly browned on the outside.
  3. Prepare the corn: In the same or a separate skillet, cook the corn kernels over medium heat until they are lightly charred and tender, about 5–7 minutes, stirring occasionally to prevent burning.
  4. Make the street corn mixture: In a bowl, mix mayonnaise, sour cream, lime juice, cotija cheese, chopped cilantro, and the cooked charred corn. Stir until well combined.
  5. Assemble the bowls: Divide the cooked white rice evenly among four serving bowls. Top each with the cooked chicken, then spoon the creamy street corn mixture over the chicken.
  6. Garnish and serve: Add extra chopped cilantro on top if desired and serve each bowl with lime wedges to squeeze fresh juice over the dish for added brightness.

Notes

  • Add sliced avocado for extra creaminess and richness in the bowls.
  • Brown rice can be used instead of white rice for a heartier, fiber-rich option.
  • Adjust the amount of chili powder to customize the spice level to your preference.
