Dressing

  • 3 tbsp fresh lime juice

Instructions

  1. Prepare the Corn: If using fresh corn, cook or grill the corn until tender. Allow it to cool, then cut the kernels from the cob.
  2. Combine Ingredients: In a large mixing bowl, combine the corn, diced avocado, halved cherry tomatoes, finely diced red onion, chopped cilantro, and minced jalapeño if using.
  3. Make the Dressing: In a small bowl, whisk together the fresh lime juice, olive oil, salt, black pepper, and garlic powder until well combined.
  4. Toss the Salad: Pour the dressing over the salad mixture and gently toss until evenly coated, taking care not to mash the avocado pieces.
