Description

This Super Seed Apple Oatmeal is a wholesome and nutritious breakfast featuring hearty rolled oats cooked with fresh apples, warming cinnamon, and a nutrient-packed mix of chia seeds, ground flaxseed, and crunchy pumpkin seeds. Sweetened lightly with maple syrup or honey, this fiber-rich dish fuels your morning with sustained energy and delicious flavors.

Ingredients

Oatmeal Base

  • 2 cups rolled oats
  • 4 cups milk or unsweetened almond milk
  • Pinch of salt

Fruit & Flavorings

  • 2 apples, diced
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • 1 tbsp maple syrup or honey

Seeds & Toppings

  • 2 tbsp chia seeds
  • 2 tbsp ground flaxseed
  • 2 tbsp pumpkin seeds

Instructions

  1. Simmer the milk: Pour the milk into a saucepan and heat it until it reaches a gentle simmer, being careful not to boil.
  2. Cook the oats: Stir in the rolled oats and a pinch of salt. Cook over medium heat for 5 to 7 minutes, stirring occasionally, until the oats begin to soften and thicken.
  3. Add apples and flavorings: Mix in the diced apples, ground cinnamon, vanilla extract, and maple syrup or honey. Continue cooking for another 3 to 4 minutes until the apples soften slightly and the mixture is fragrant.
  4. Incorporate seeds: Stir in the chia seeds and ground flaxseed thoroughly, allowing the mixture to thicken further and the seeds to absorb liquid.
  5. Serve and garnish: Divide the oatmeal evenly into bowls and sprinkle the pumpkin seeds on top for a crunchy finish. Serve warm.

Notes

  • Add chopped walnuts or pecans to the oatmeal for extra crunch and flavor.
  • Using steel-cut oats can give a chewier texture; if using, increase the cooking time accordingly.
  • Adjust sweetness by adding more or less maple syrup or honey based on preference.
