Ingredients

Chicken and Aromatics

  • 1½ lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

Teriyaki Sauce

  • ½ cup low-sodium soy sauce
  • ¼ cup honey
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water

For Garnish

  • Sesame seeds

Instructions

  1. Heat the oil: Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat to prepare for cooking the chicken.
  2. Cook the chicken: Add the bite-sized chicken pieces to the hot skillet and cook, stirring occasionally, until they are browned on all sides and cooked through, about 5–7 minutes.
  3. Add aromatics: Stir in the minced garlic and grated ginger and cook for about 30 seconds until fragrant, being careful not to burn them.
  4. Prepare the teriyaki sauce: In a bowl, whisk together the low-sodium soy sauce, honey, brown sugar, rice vinegar, sesame oil, cornstarch, and water until smooth and combined.
  5. Simmer with sauce: Pour the prepared teriyaki sauce over the cooked chicken in the skillet. Reduce the heat to medium and simmer for 3–5 minutes, stirring occasionally, until the sauce thickens and coats the chicken evenly.
  6. Garnish and serve: Remove from heat and garnish the teriyaki chicken with sesame seeds and sliced green onions. Serve immediately with steamed jasmine rice or noodles.
