Ingredients
For the Turkey
- 1 lb ground turkey
- 1 tbsp olive oil
- ½ small yellow onion, diced
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- ½ tsp black pepper
For the Teriyaki Sauce
- ¼ cup low-sodium soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp water
- 1 tsp sesame oil
- 1 tsp cornstarch
For the Bowls
- 3 cups cooked white or brown rice
- 1 cup broccoli florets
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- ½ cup shelled edamame
- 2 green onions, sliced
- 1 tbsp sesame seeds
Instructions
- Prepare Teriyaki Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, water, sesame oil, and cornstarch until smooth.
- Sauté Onion: Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 2–3 minutes until softened and translucent.
- Cook Turkey: Add ground turkey to the skillet and cook for 6–8 minutes, breaking it apart with a spatula as it browns evenly.
- Add Aromatics: Stir in minced garlic, grated ginger, and black pepper. Cook for 30–60 seconds until fragrant.
- Combine Sauce and Turkey: Pour the prepared teriyaki sauce over the turkey in the skillet and stir well to coat.
- Simmer Sauce: Reduce heat to medium and simmer for 2–3 minutes, stirring occasionally, until the sauce thickens and clings to the turkey.
- Cook Vegetables: Steam or lightly sauté broccoli florets, shredded carrots, bell pepper slices, and shelled edamame until crisp-tender, about 3-5 minutes.
- Assemble Bowls: Divide the cooked rice evenly among four bowls. Top each with the teriyaki turkey mixture and arranged vegetables.
- Garnish and Serve: Sprinkle sliced green onions and sesame seeds over the bowls before serving to add freshness and texture.
Notes
- Ground chicken or lean ground beef can be substituted for turkey.
- Add pineapple chunks for a sweet, tropical flavor variation.
- For a spicy kick, add Sriracha or red pepper flakes to the teriyaki sauce.
- Use cauliflower rice as a low-carb alternative.
- Keep vegetables slightly crisp for the best texture and contrast to the tender turkey.
