Ingredients
Chicken
- 4 boneless, skinless chicken breasts
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 1 tbsp lemon juice
- 2 tbsp chopped fresh parsley
Cooking
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
Instructions
- Season the chicken: In a small bowl, combine paprika, onion powder, Italian seasoning, salt, and black pepper. Rub this seasoning mix evenly over both sides of the chicken breasts.
- Heat the skillet: Place a large skillet over medium-high heat and add olive oil. Allow it to heat until shimmering.
- Cook the chicken: Add the seasoned chicken breasts to the hot skillet and cook for 5–6 minutes on each side until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside on a plate.
- Melt the butter and cook garlic: Reduce heat to medium. In the same skillet, melt the unsalted butter. Add the minced garlic and cook for about 1 minute or until fragrant, being careful not to burn the garlic.
- Deglaze and make sauce: Stir in the lemon juice and use a wooden spoon to scrape up any browned bits from the bottom of the pan. These bits add great flavor to the sauce.
- Finish the dish: Return the chicken breasts to the skillet. Spoon the garlic butter sauce over the top of the chicken. Let it simmer gently for 2–3 minutes to meld the flavors and reheat the chicken.
- Garnish and serve: Sprinkle chopped fresh parsley over the chicken for a bright, fresh finish. Serve immediately with your choice of sides such as mashed potatoes, rice, or steamed vegetables.
Notes
- Add mushrooms or green beans to the skillet with the chicken for a complete one-pan meal.
- For an even richer flavor, finish the dish with an extra tablespoon of melted butter just before serving.
- Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
