Description

A vibrant and flavorful build-your-own barbacoa beef bowl board featuring tender, slow-cooked shredded beef chuck roast served with cilantro-lime rice, black beans, sweet corn, creamy avocado, fresh salsa, cheese, and zesty garnishes. Perfect for gatherings and dinner, this recipe offers a customizable and festive Mexican-inspired feast.

Ingredients

For the Barbacoa Beef

  • 1 kg beef chuck roast
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 1 cup beef broth
  • 2 tbsp lime juice
  • 2 tbsp apple cider vinegar
  • 2 chipotle peppers in adobo, chopped
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and black pepper to taste

For the Bowl Board

  • 3 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 avocados, sliced
  • 1 cup cherry tomatoes
  • 1/2 red onion, diced
  • 1/2 cup shredded cheese
  • 1/2 cup sour cream
  • 1/2 cup fresh cilantro
  • Lime wedges
  • Fresh salsa

Instructions

  1. Season the Beef: Generously season the beef chuck roast with cumin, oregano, smoked paprika, chili powder, salt, and pepper to infuse it with rich Mexican flavors.
  2. Sear the Meat: Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat. Sear the beef on all sides until beautifully browned, creating a flavorful crust.
  3. Sauté Aromatics: Add the diced onion and minced garlic to the pot and cook for 2–3 minutes until softened and fragrant, building depth in the sauce.
  4. Add Liquids and Peppers: Pour in the beef broth, lime juice, apple cider vinegar, and chopped chipotle peppers in adobo. Stir to combine all ingredients evenly around the meat.
  5. Slow Cook the Beef: Cover the pot and reduce the heat to low. Let the beef simmer gently for about 3 hours or until it becomes very tender and easily shreds with a fork.
  6. Shred and Mix: Remove the beef from the pot, shred it finely using two forks, then toss it back with the cooking juices to keep it moist and flavorful.
  7. Assemble the Bowl Board: On a large serving board or platter, arrange the cooked rice, black beans, corn, sliced avocados, cherry tomatoes, diced red onion, shredded cheese, sour cream, fresh cilantro, fresh salsa, and lime wedges beautifully around the center.
  8. Serve and Build Bowls: Place the shredded barbacoa beef in the center of the board and invite everyone to build their own personalized bowls with the variety of toppings and sides.

Notes

  • Beef chuck roast is ideal for this recipe because it becomes fork-tender and flavorful during slow cooking.
  • For a quicker version, use an Instant Pot to pressure cook the beef for about 60 minutes followed by a natural release.
  • Add pickled jalapeños or extra chipotle peppers to increase the heat level if desired.
  • Leftover shredded barbacoa can be refrigerated for up to 3 days or frozen for longer storage.
  • Serve with warm corn or flour tortillas for an alternative way to enjoy the barbacoa.
