Ingredients
Bread
- 4 slices ciabatta or sourdough bread
Fillings
- 8 oz (225 g) fresh mozzarella, sliced
- 2 medium ripe tomatoes, sliced
- 8–10 fresh basil leaves
- 2 tbsp pesto (optional)
Condiments & Seasoning
- 1 tbsp balsamic glaze
- 1 tbsp extra virgin olive oil
- Salt, to taste
- Freshly ground black pepper, to taste
- Butter (optional, for toasting)
Instructions
- Toast the Bread (Optional): Lightly toast the slices of ciabatta or sourdough bread to add crunch and prevent sogginess. You can do this in a toaster or on a skillet with a bit of butter for extra flavor.
- Apply Pesto: Spread pesto evenly over one or both slices of toasted or fresh bread if using. This adds an herby depth to the sandwich.
- Assemble the Layers: Place slices of fresh mozzarella on the bread first, then layer the ripe tomato slices on top, followed by fresh basil leaves for an aromatic touch.
- Season: Sprinkle salt and freshly ground black pepper over the tomato and basil layers to enhance the flavors.
- Add Drizzles: Drizzle extra virgin olive oil and balsamic glaze evenly across the fillings to add richness and tang.
- Close and Serve: Place the remaining bread slices on top to form sandwiches. For a cold version, slice in half and serve immediately. Alternatively, grill the sandwich in a skillet or pan for 2–3 minutes per side until the cheese softens slightly for a warm, melty result.
Notes
- Use ripe, in-season tomatoes for the best natural sweetness and juiciness.
- Add sliced avocado or grilled chicken to make the sandwich more filling and protein-rich.
- Lightly grill or toast the bread before assembling for extra crunch and texture contrast.
- Best enjoyed fresh to prevent the tomatoes from making the bread soggy over time.
