  • 2 large ripe avocados

Tuna Salad Filling

  • 2 cans tuna in water, drained
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 cup diced celery
  • 2 tablespoons finely diced red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped green onion
  • Salt and black pepper, to taste
  • 1/4 teaspoon garlic powder
  • 1 tablespoon capers, optional

Garnish

  • Paprika, for garnish
  • Additional chopped parsley (optional)


Instructions

  1. Prep the avocados. Cut the avocados in half lengthwise and remove the pits carefully without damaging the shells. Using a spoon, scoop out some avocado flesh from the center of each half, leaving the shells intact. Dice the removed avocado and set it aside for later use.
  2. Make the tuna mixture. In a mixing bowl, combine the drained tuna, mayonnaise, lemon juice, Dijon mustard, diced celery, finely diced red onion, chopped fresh parsley, chopped green onion, salt, black pepper, and garlic powder. Mix thoroughly to blend all flavors evenly.
  3. Fold in avocado and capers. Gently fold the reserved diced avocado and optional capers into the tuna mixture to add creaminess and extra flavor without breaking up the tuna too much.
  4. Assemble the avocado boats. Spoon the prepared tuna mixture generously into each avocado half, filling them to the top.
  5. Garnish and serve. Sprinkle paprika and additional parsley over the filled avocado halves for a pop of color and flavor. Serve immediately, optionally with lemon wedges on the side for extra brightness.
