Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 small onion, diced
- 1 carrot, diced
- 1 celery stalk, diced
- 2 cups cooked chickpeas or canned chickpeas, drained
- 4 cups vegetable broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and black pepper to taste
- 2 cups chopped spinach
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Heat Olive Oil: Warm the olive oil in a large pot over medium heat to create a base for sautéing the vegetables, enhancing their flavors.
- Sauté Vegetables: Add diced onion, carrot, and celery to the pot and cook for 4–5 minutes, stirring occasionally, until the vegetables soften and become fragrant.
- Add Garlic: Stir in the minced garlic and cook for 1 minute more, being careful not to let it burn, to release its rich aroma.
- Add Chickpeas and Spices: Pour in the cooked chickpeas, vegetable broth, smoked paprika, cumin, salt, and black pepper. Stir well to combine all the ingredients.
- Simmer Soup: Bring the mixture to a boil, then reduce the heat and let it simmer gently for 15–20 minutes, allowing the flavors to meld beautifully.
- Add Spinach: Stir in the chopped spinach and cook until the leaves are just wilted, preserving their vibrant color and nutrients.
- Finish with Lemon Juice: Add the lemon juice to the soup, mixing thoroughly to brighten the flavors and add a fresh, tangy finish.
- Garnish and Serve: Ladle the soup into bowls, garnish with fresh parsley, and serve warm for a cozy, nourishing dish.
