Description
Virginia Spoon Bread is a classic Southern comfort food that blends the texture of cornbread and pudding into a soft, creamy, and airy cornmeal-based side dish. Best served warm with a spoon, it’s rich and comforting, perfect alongside hearty Southern meals.
Ingredients
Dry Ingredients
- 1 cup cornmeal
- 1 tsp salt
- 1 tsp sugar (optional)
Wet Ingredients
- 2 cups milk
- 1 cup water
- 2 tbsp butter
- 2 eggs (separated)
Instructions
- Preheat Oven and Prepare Baking Dish: Preheat your oven to 180°C (350°F) and grease a baking dish to prevent sticking.
- Simmer Liquid Ingredients: In a saucepan, combine milk, water, butter, and salt. Heat this mixture over medium heat until it just starts to simmer.
- Add Cornmeal and Thicken Mixture: Gradually whisk in the cornmeal while keeping the mixture on the heat, stirring continuously until the cornmeal thickens, forming a creamy base.
- Cool Slightly and Add Egg Yolks: Remove the saucepan from heat and let the cornmeal mixture cool for a few minutes. Then beat the egg yolks and stir them into the slightly cooled cornmeal mixture to enrich it.
- Whip Egg Whites: In a clean bowl, beat the egg whites until they form stiff peaks. This will add airiness to the bread.
- Fold Egg Whites into Batter: Gently fold the beaten egg whites into the cornmeal mixture, being careful to keep as much air in the batter as possible for a light texture.
- Transfer to Baking Dish: Pour the combined batter into the prepared baking dish, spreading it evenly.
- Bake: Place the dish in the preheated oven and bake for 30 to 35 minutes, or until the spoon bread is set and lightly golden on top.
- Serve Warm: Remove from the oven and serve the spoon bread warm, ideally with a spoon, to enjoy its soft, creamy texture.
Notes
- The texture should be soft and scoopable rather than sliceable.
- Adding cheese can provide a delicious savory variation.
- For the best taste and texture, serve the spoon bread freshly baked and warm.
