Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 180°C (350°F) and grease a baking dish to prevent sticking.
  2. Simmer Liquid Ingredients: In a saucepan, combine milk, water, butter, and salt. Heat this mixture over medium heat until it just starts to simmer.
  3. Add Cornmeal and Thicken Mixture: Gradually whisk in the cornmeal while keeping the mixture on the heat, stirring continuously until the cornmeal thickens, forming a creamy base.
  4. Cool Slightly and Add Egg Yolks: Remove the saucepan from heat and let the cornmeal mixture cool for a few minutes. Then beat the egg yolks and stir them into the slightly cooled cornmeal mixture to enrich it.
  5. Whip Egg Whites: In a clean bowl, beat the egg whites until they form stiff peaks. This will add airiness to the bread.
  6. Fold Egg Whites into Batter: Gently fold the beaten egg whites into the cornmeal mixture, being careful to keep as much air in the batter as possible for a light texture.
  7. Transfer to Baking Dish: Pour the combined batter into the prepared baking dish, spreading it evenly.
  8. Bake: Place the dish in the preheated oven and bake for 30 to 35 minutes, or until the spoon bread is set and lightly golden on top.
  9. Serve Warm: Remove from the oven and serve the spoon bread warm, ideally with a spoon, to enjoy its soft, creamy texture.
