  • 6 whole cloves
  • 4 whole allspice berries
  • 1 star anise

Instructions

  1. Combine Ingredients: Pour the apple cider, cranberry juice, and orange juice into a large pot. Add the brown sugar if using, stirring to dissolve.
  2. Add Spices & Fruit: Place the cinnamon sticks, whole cloves, allspice berries, star anise, orange slices, and apple slices into the pot, distributing evenly.
  3. Heat to Simmer: Turn the stove to medium heat and bring the mixture to a gentle simmer, allowing the flavors to meld.
  4. Simmer & Infuse: Reduce the heat to low and let the wassail simmer gently for 30 to 40 minutes, stirring occasionally to prevent sticking and enhance infusion.
  5. Strain (Optional): Remove from heat and strain out the whole spices and fruit slices if preferred, to avoid bitter flavors and for a smoother drink.
  6. Serve Warm: Pour the warm wassail into mugs and garnish with additional orange slices, apple slices, and fresh cranberries if desired. Enjoy immediately.
