Ingredients

Soup Base

  • 4 cups seedless watermelon, cubed
  • 2 large ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • ½ red bell pepper, chopped
  • ¼ cup red onion, chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh basil or mint
  • Salt and black pepper, to taste

Garnish

  • Diced cucumber, for garnish
  • Diced watermelon, for garnish
  • Fresh herbs (basil or mint), for garnish


Instructions

  1. Combine Ingredients: Place the cubed watermelon, chopped tomatoes, peeled and chopped cucumber, red bell pepper, red onion, fresh lime juice, olive oil, chopped basil or mint, salt, and black pepper into a blender.
  2. Blend: Blend the mixture until smooth, or pulse to leave it slightly chunky based on your texture preference.
  3. Chill: Transfer the blended soup into a container and refrigerate for at least 2 hours to allow flavors to meld and to chill thoroughly.
  4. Stir Before Serving: Give the soup a good stir before serving to ensure even flavor distribution.
  5. Garnish and Serve: Ladle the gazpacho into bowls and garnish with diced cucumber, diced watermelon, and fresh herbs to add additional texture and freshness.
