- 6 cups mixed greens
- 2 cups cooked chicken breast, sliced

- 2 cups roasted sweet potatoes, cubed

Dijon Vinaigrette
- ¼ cup extra-virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp honey
- Salt and black pepper to taste
Instructions
- Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Cube the sweet potatoes and spread them evenly on a baking sheet. Roast for 25–30 minutes, or until tender and slightly caramelized at the edges. Remove from the oven and let cool slightly.
- Make the Dijon Vinaigrette: In a small bowl, whisk together the extra-virgin olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until fully emulsified and smooth.
- Prepare the Salad Base: On a large serving platter or individual plates, arrange the mixed greens evenly as the base for your salad.
- Assemble the Toppings: Neatly arrange the sliced chicken breast, crumbled bacon, roasted sweet potatoes, sliced hard-boiled eggs, diced avocado, crumbled blue cheese, dried cranberries, and toasted pecans on top of the greens, distributing them evenly for a colorful presentation.
