Ingredients

Salad

  • 6 cups mixed greens
  • 2 cups cooked chicken breast, sliced
  • 4 slices bacon, cooked and crumbled
  • 2 cups roasted sweet potatoes, cubed
  • 2 hard-boiled eggs, sliced
  • 1 avocado, diced
  • ½ cup crumbled blue cheese
  • ¼ cup dried cranberries
  • ¼ cup toasted pecans

Dijon Vinaigrette

  • ¼ cup extra-virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard

Instructions

  2. Make the Dijon Vinaigrette: In a small bowl, whisk together the extra-virgin olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until fully emulsified and smooth.
  3. Prepare the Salad Base: On a large serving platter or individual plates, arrange the mixed greens evenly as the base for your salad.
  4. Assemble the Toppings: Neatly arrange the sliced chicken breast, crumbled bacon, roasted sweet potatoes, sliced hard-boiled eggs, diced avocado, crumbled blue cheese, dried cranberries, and toasted pecans on top of the greens, distributing them evenly for a colorful presentation.
