Ingredients

Rice

Tofu

  • 14-ounce extra-firm tofu, pressed and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • Salt and black pepper, to taste

Toppings

  • 1 ripe avocado, sliced
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • ¼ cup diced red onion
  • Fresh cilantro
  • Lime wedges


Instructions

  1. Prepare lime rice: Toss the cooked jasmine rice with lime juice, lime zest, chopped cilantro, and salt until evenly combined and fragrant.
  2. Season tofu: In a bowl, season cubed, pressed tofu with smoked paprika, garlic powder, cumin, salt, and black pepper.
